Modern Times Flights With The Wizard @ Pub 365


Veronica’s First Beer Dinner!!!

Many hours of preparation, and promotion went into getting this culinary adventure of epic proportions set up. Veronica being the #1 Party Wizard in Las Vegas would accept nothing but perfection, and that’s exactly what she achieved. It ended up being the #1 beer dinner that Pub 365 has done in terms of popularity. This success is partially because Modern Times is great, Veronica’s putting in that work, and a collaboration with the ever so popular, Beer Zombies. Ok... ok.... ok... enough bragging and boasting let’s get into the pairings.

Welcome Beer: Modern Times Ice



What a greeting, walk in and receive a cold tall boy. This beer was a perfect beer to get the pallet primed to recieved the perfect pairings to proceed. Ice from Modern Times is exactly what it’s name suggests, Ice...... Cold...... Beer!! It’s an amazing example of an American brewery taking on the refreshing classic Czech Premium Pale Lager. It even is brewed using Saaz hops to keep true to style.

Course 1
Citrus Shrimp Salad/ Fruitlands Passionfruit Gose



This was a great first impression, as many thought this was the best pairing of the night. The salad was comprised of; shrimp in a citrus and coriander marinade, arugula, grapefruit, blood orange, avocado, and a passion fruit vinaigrette. The Fruitlands Gose elevated the dish as did the dish elevate the beer. The intensity’s matched very well, the passion fruit was bright in both, the beer brought more of the coriander flavor out of marinade, the acidic nature of both let some sweetness shine through. It was a beautiful start to a great night. 

Course 2
Carnitas Tacos/ Monsters Park Mexican Hot Chocolate 



This was a successful pairing in a very different way than the first. The tacos were comprised of: guajillo tossed pork carnitas, tomatillo salsa, cabbage, avocado, and queso fresco, on a corn tortilla. This Monsters' Park has additions of cinnamon, cocoa nibs, chilis, and vanilla beans. This was more of a contrasting pairing. Chocolate sweetness from the beer balanced the spicy heat of the taco, but the spices in the taco brought out more chili flavor that was hard to detect before. Very complex pairing that was a homerun. 

Course 3
Ham Torta Slider/ Orderville Hazy IPA



This was my favorite dish on its own. It was simple, but fresh and flavorful. The torta was comprised of; bun, ham, tomato, avacado, serrano pepper aoli, and lettuce. Orderville is an IPA that is hopped with Mosaic. This beer has a tropical nose, but has a peppery finish that complemented the aoli. The torta itself wasn’t overly spicy, but the bitterness in the beer helped kick it up a notch or two. Overall the fresh flavors in the torta went well with the refreshing Orderville. 

Course 4 
Cheese Platter/ Barrel Aged Devils Teeth



What could be better then bold cheese with bold beer. The cheese platter was comprised of: aged brie, manchego cheese, truffle brie, pistachios, and grapes. Devil’s Teeth is a hybrid of an Old Ale and an Imperial Stout. It brings rich maltiness and robust roastiness in a thick, tongue-coating, aggressively flavorful package. Everything paired great with the exception of one kink. The truffle brie was too bold and over powered the beer with a wave of umami earthiness. In the future, I would replace with a classic bleu cheese. The rest of the cheeses played off the rich, thick, booziness of the Devil’s Teeth.

Course 5
Angel Food Cake/ Mega Black House 



Decadent, sweet, rich cake, with berries, and an almond crust!! Paired with what is the equivalent of boozy, smooth, cold brew! What a beautiful end to a delicious night.
